The Modern Mai-Tai
Bacardi 8 year old rum, pineapple juice, lime and almond
syrup: simple and dangerously drinkable. Created in Oakland
in 1944 by Jules Bergeron or 'Trader Vic' as he later became
known. The first ever description of this drink was 'out
of this world'.
Mojito
Bacardi 8 year old rum muddled with lime and mint, topped
with soda. A Cuban classic: refreshing and zingy.
Southside
Millers gin, mint, lime & apple juice. Similar to the Mojito
in style but light and refreshing!
Caipirinha
Cachaca sugar cane rum, fresh lime and brown sugar. Cachaca
is Brazil's national spirit; Brazilians manage to consume
2000,000,000 litres each year! In Portuguese Caipirinha
means 'little countryside drink'.

Batida Abachi
Cachaca, pineapple puree, lemon & lime juice. A traditional
Brazilian working man's drink, not quite so famous as the
Caipirinha over here in the u.k, probably because the name is so difficult
to pronounce. Never the less an excellent tasty tropical
drink.
Pina Colada
Havana especial, pineapple puree, coconut milk & double
cream. How do so many get it wrong? When made properly this drink
is delicious!

Havana Club rum, Chambord, raspberries, sugar & lime juice
blended up. The Daiquiri was created in Cuba by a miner!
It was named after a mine just outside Santiago. This is
a refreshing summer favourite.
Peach Daiquiri
Havana Club rum, peach schnapps, peach puree, sugar & lime
juice blended up. Peachy!
Bellini
Peach puree, peach schnapps, a squeeze of lemon, topped
